Your New Favorite Salad to Pair with Pinot Noir

A light Evening Starter

Market Fresh Greens, Herbed Goat Cheese, Strawberries, Roasted Beets, Pistachios and Rosewater Lemon Vinaigrette

We recently had the opportunity to work with Truckee River Winery for a lunch and wine pairing! FIrst on the menu was a 2014 Rosé from Lodi which is a combinaton of Merlot and a hybrid grape called Symphony.

Given the details of the wine, chef Ashley Ullrich created a beautiful salad to compliment the flavors. Here's what she had to say:

"The reason this pairing works so well is for a few reasons: What grows together goes together! Sourcing all of the produce from local areas, and grapes from nearby Lodi. Foods and grapes that grow in the same areas often exhibit similar terroir, making them great matches.

Another reason this pairing goes so well is the concept of complimentary flavors. This wine has crisp acidity, strawberry and floral notes, and a touch of earth from the skin contact. The salad has bright herbal goat cheese, strawberries, rose water and earthy sweet beets. A great match. The flavors in the wine made the food pop and the food made the wine pop."

Painting the plate is super easy and gives an extra flare to the already colorful ingredients! 

  • Mix together a combination of beet and lemon gel
  • Grab a new paint brush, or one specifically used for food.
  • Dip and paint the plate in one swift motion!
